Well... frankly, I find writing profiles boring in itself. Needing the same sort of credentials is fine, but writing similar/same thing all the time gets old when you've been RP'ing for a long time.
It's just something you have to get over in the long run. A lot of people I know think about characters at really unrealistic times, so they keep a skeletal profile around just to jot down that random character. More information is always better especially when you deal with elements such as time.

Well, I haven't been RPing for that long as to get bored by the general procedure. But, I usually stick to the template for every RP, depending on what the creator asks for.

Perhaps the best part of a profile is the "character quirks and little details" part like favourite food, colour, etc. It really colours up the character nicely More so if you manage to play it properly as well.p/s: Yes, I love you sweetums :3

I agree. Giant character sheets bore me. All you need is to describe general ability to save being accused of pulling skills out of your arse, a bit of background, appearance ( or some picture of some anime thing if you're like that... -.-' ) and bits of vital info. Your personality should be developed in the RP.
Then again, size of sheet should be pretty much (for me) the rough size of the average post you intend to be making. If you're just doing a paragraph a post in Beginner, then you don't need much detail beyond appearance, name, age, and skills/items. But if you're pumping out about a page per post, your character deserves a decent amount of flesh to start with, meaning adding a few past events, memories, deeper appearance, personality, habits, and so forth.

It helps to have a good, detailed character template when you want to form a character distinct from what you've previously played. I like this template to get the general idea of a character, but I will rarely refer to it as I roleplay along because I enjoy the feel of filling in the character's shoes.
