It's an anthropology class, no? Use her as a case study to represent the Bible Belt, continue to argue semantics about the biblical human/animal dichotomy with her, the teacher and the whole class. Compare beliefs with other groups that considered themselves above animals and peoples that did the opposite (like Indians and Egyptians), ask her opinion on the animal worship of said ethnic-cultural groups... you know, make a class out of it. Then send her home feeling completely stupid.
