Shaolin (少林) is a name attributed to the specific monastery of Buddhist monks located somewhere in China. They are known for their martial arts, called Shaolin kung fu, or Shaolin fist, after them (少林拳). The martial art is now taught outside of the monastery, presumably from disciples of the temple who had left.

Monks are known as 和尚, or 僧侣 in Chinese. As such, a Shaolin monk can be called 少林和尚. This does not mean he can kick your butt, it just means he's a monk. As far as I have seen, the Japanese do not commonly use the kanji 少林 (pronounced Shorin). I believe they use 僧 as well, or 司祭 when referring to monks. (Although in present day, shinto priests are far more common? Also, I have extremely limited knowledge of Japanese, so correct me if I'm wrong. This is also based on modern terminology, so there may well be difference with the feudal era.)
