Personally, I think theme #2 is too vague, enabling the writer to choose any type of story he wishes. It doesn't lead the author to anything in particular, there's too much freedom, nothing to do stick to as a base.
I like the first theme, even though I, personally, don't have any ideas.
The reason that I'm going to vote for the third theme is that the Seven Deadly Sins are a good subject to write about in a lot of ways, and because having to pick one or more of the sins actually gives a quite enjoyable freedom to the writer, in my opinion. Portraying one of the sins in a story actually seems rather fun and it doesn't have to be stereotypical, there's various ways to do so. I love that.
And I think that having two themes in one is actually a bad idea, to be honest. Seems rather messy. x_x
