If I notice I'm breathing, I can't breathe.
My brain can't handle it.

Subconscious or passive actions don't count. It requires no active attention to breathe or blink or have your heart beat because your medulla oblongata does that without your attention. Sitting (or rather holding your body upright rather than flopping onto the floor) is similar in that it's not something you actually have to think about, it's a subconscious thing. Multi-tasking is doing two or more things that actually require your attention at the same time.
Also, it's not that multi-tasking is impossible, because that's obviously not true. People say humans can't multi-task because it's horribly inefficient and we aren't fantastic at splitting our attention. Rather than getting twice as much done, you actually cut your productivity down by trying to accomplish two different tasks at the same time. This is something that has been studied and proven over and over and over again. Anyone saying it's impossible for us to multi-task is just being hyperbolic.

Then, by the same token, controlling peristalsis and hormones are an action.
I'm sitting, typing, breathing, thinking, moving waste through my bowels, building up urine in my bladder, releasing thyroid hormones, and warming my body through metabolism all at the same time.
Which is to say, no one cares what you're doing automatically when it comes to multi-tasking.
