I was thinking that everyone plays a god/goddess, elf,dwarf,human,gnome,fairy, or any other mythical creature
God/Goddesses:There are many, each one has control over their own nation, not directly, but the people of that nation serve under the deity.
Elf:Water elf, fire elf,electric elf, storm elf, sky elf, night elf, sun elf,wood elf, etc.
Dwarfwarf.You know what they are.
Human:Human......
Gnome:They might be on your lawn right now, or maybe their just smaller dwarves, whatever you want.
Fairy:Can be big or small.
Disciple/Semi-God/Semi-Goddess- related to the god they serve under, think of a English minor serving under a English major, so their not as powerful as the Gods/Goddesses they serve under, but still have a good bit of power over their element.
if this RP takes off, let me know in a CS whether your a mage, warrior, archer, etc.
Supreme: The high Goddess, parent of all other Gods and Goddesses.If you come up with more and they get accepted, and this RP takes off, you'll be able to play them, however, they are not a main player in it, I already have Moon goddess.

Plot 1: The supreme turns the gods/goddesses into regular mortals and forces them to go on many adventures in order to slowly get their powers back

That's essentially it, they retain SOME power, not much, and must complete multiple tasks to earn their powers back, i.e at the start a fire god could summon a few sparks to light a fire, at the end they could throw the sun at the planet, however not if their in a mortal body, they have to manage to manifest in their original form for that much power.
Are you combining both plots though?
Now I am, at first(A long while) they have to regain their powers through challenges that get harder with the more powerful they get.Then at the end they have their powers and must manage with them, or they could follow plot D, they then send their Disciples to take their place after a adventure like they themselves took, because the ending of their reign has come.
