To elaborate, since I wrote that quick response while at work...

The list is meant to be a list of TALENTS. So just because it's not on there doesn't mean your character can't do it. They just can't do it very well for the most part. (Unless we're talking about magic or a skill that would require your character to have at least some background in it.) I'm going to go with the idea that Hyrule offers public schooling-- therefore most ought to be able to read and do basic math, etc.
