Figured I'd pop in again. I've been busy so I didn't post, but I am interested and have been following the conversation. 
I'm the guy who mentioned the potions bartender. I put some thought into it and realized even in that sort of setting alcohol would still be the primary "elixir" being served. The potions I guess would come into side effects of drinks, which I suppose is what you meant in your initial response to the idea. Either way, a character has been taking shape in my mind, though I'm having trouble deciding on what to have him do outside that job.
