The same limitations on Amaterasu, except for the speed due to its differing method of creation, will apply to scorch release (which must be learned by having studied, or been taught by, an Uchiha [that just plain makes sense since scorch release is more or less a slightly more limited Amaterasu]).

Oh yeah, and sharingan will not allow perfect replication/prediction of people's techniques ever. Replication of people's techniques can certainly happen, but depending on the skill of the Uchiha it will take them less or more training to properly copy someone's technique(s). Prediction will work, but only 2 steps ahead with normal sharingan and 4 with mangekyou unless you have a unique ability of your own construction for that. Keep in mind that eventually, with overuse of Mangekyou, your Uchiha will go blind and lose their sharingan's abilities overall as well as...you know, their sight and anything that comes with it.
