Well there's an unknown group ahead of them, they don't have time to question each other and it doesn't look good in front of the guide who is risking his life just by being with us.  Gin joined you so you have something to go off of but Jiang is concerned with survival.  He asked Gin to watch after Takumi because in his eyes, he is the best one at doing that.  Physically the strongest, Oni genes means that he can shrug off attacks and kill anyone who may have caught him off guard.  I know you may have thought it was him being dismissive of Gin or  the race but he was honestly putting all of his trust in Gin to carry out the most important task of protecting the most important person in the group.
