It probably wasn't dead, he'd only punched it after all. But he didn't want to like, cut its throat. But the other quest said you needed to take care of the goblins. But surely it wouldn't be a bother if it found both its ears cut off. Yeah, there was no way it would come back after that, it'd be stupid to do so. Orion quickly grabbed a goblin ear and sheared it off in one quick movement, repeating the process within another moment. Having done that he ran back into town as fast as he could, knife in one hand, ears in the other. His next stop was Granny because there was no way he was carrying these ears around for any longer then he had to.
