As for your idea to leave job classes up to players, I think that’s cool but we should be wary of making overtly complex professions (sounds better than ‘job class’ to me, but I’m a tabletop vet). But yeah, sounds all good to me. Also, to reiterate an inquiry— where is the server we’re going to be on centrally located? This may or may not make me change my character’s name.
