The example CS was made with data from MAHQ, which simply lists all the weaponry used by the mech in question, optional and permanent. So while there are quite a few listed as options, only a few will ever be equipped at one time. 

As a rough guideline, we'll go with three at a time: a primary hand-held, like an autocannon, a shoulder/back-mounted missile/rocket launcher of some sort, and something else of your choice. I think that's a fair number without going overboard.
