It's not a matter of her being a princess.
It's the fact it basically reduces her to the same level as most other Disney Princesses. All dressed up, sitting around and waiting for their hero to save them. Not much effort or individuality from them, main other use being to try to ram "Be a good person" lessons down children's throats so Disney looks like the best pick to show children.
Leia was not made for Disney, she is not written like a Disney Princess and has a lot more individuality (Granted, Disney is getting better at it now. But not so much when this change was announced). It's annoying to see a good character be lowered/reduced to the same category as a bunch of bland one-dimensional characters.
1313 actually did have a big following of being the first rated M star wars game. That was huge, everyone was excited to see it in a more dark and mature setting outside of the books.
Disney has a risk to fuck this up though, they have some good examples but also bad ones. It is a legit worry they fuck it up, especially due to reasons Captain Jordan highlighted and because it basically becames the new face of star wars for new fans coming in. If it ends up being shit, star wars get's a worse reputation for it and loses a number of people who otherwise would of loved the franchise. Add on top of that people have had high hopes and expectations for new movies for a long time, and Disney has the huge potential to shit all over those fans simply for the sake of making a child friendly movie that tries to shove good lessons in it to keep with the Disney reputation (I know there's exceptions, I listed them earlier. But Star Wars is a series that both is more popular and a lot of parents (and their little kids) will be keeping their eyes on, so there's more pressure to make star wars "child appropriate" than say Tron or Pirates of the Caribbean).
And I'm also not bashing Disney for a movie not out yet. I'm looking at their previous track record and voicing worries/concerns as a result of that which is completely valid.

If Lucas can do that just by re-releasing the original movies, how bad can Disney and JJ Abrams do while mucking around with a new trilogy of movies? I'm not sure I want to find out.
I never watched their 2012 versions but really? They did that with Vader?
Also you bring up some good points, when I show star wars to my kid I want to show them the originals (which I still own so that should be easy), but not have someone say expose them to the butchered altered version first and ruin their vision/idea of star wars as a result.
