I don't think it has been specified. But I would imagine that, given their size and body structure, their closest analogue are elephants. But the advantage of white giants is that they never sleep or tire, so they will maintain a steady pace for 24 hours a day.

Of course, @Muttonhawk has the final say on this, since he made the White Giants.
