I'd rather be as clear as possible in the sheet and avoid having to answer questions later, even if that does make it (admittedly) long-winded. Because hey, the best part of RPing is meticulous paperwork beforehand, right? Right, guys? Totally!

Since Bing isn't going to be able to lead this one, I don't mind stepping up and GMing. Or, if you guys would rather have someone else, I can always help co-GM. This looks like it has a fair amount of interest so I'd hate to see it go to waste.

In any case I'm going to start by working on an updated CS, which should be helpful either way.
Shouldn't there be an inventory section or something similar in the CS? Obviously characters that live in Estermere will have a lot of possessions that won't necessarily be a part of their present inventory, but I find it's very helpful for keeping track of what each character would be expected to have on them at any given moment (and it also deters people from "finding" health potions in their pockets later on down the road, although this is rarely a problem with the right group of players anyway). I think this would be especially appropriate considering this RP takes cues from DnD, which as we all know is fairly specific when it comes to inventory management.

Also, for characters with magical powers, shouldn't there be like a magic/abilities/skills section that allows them to explain those powers in detail? In my experience it's a lot better to make sure the strengths and limitations of magic and abilities are outlined clearly before the roleplay starts to avoid problems arising later. Given that this is a character driven roleplay I'd say having a balanced cast of characters would be a pretty high priority.

Sorry to be full of suggestions, but I noticed that it's your first time GMing so I thought I'd offer some of my advice. There's no real downside to having more information about a character aside from the sheet taking slightly longer to fill out (and if they're too lazy to fill out two extra sections of the sheet then I'm not really sure you want them to be a part of your roleplay to begin with). I'd be happy to assist you as a co-GM too if you'd like.
Here's the skill system you wanted to see. All credit goes to Dervish, of course.

~A Note on Skills~

In order to keep things fair and balanced, we will organize skills based on a three tier system, first devised by Dervish in a previous RP. At character creation, you may select one expert-level skill (equivalent of rank 75 in-game), three major skills (equivalent of rank 50) and three minor skills (rank 20). In order to become more specialized, you may choose to trade two skills of a lower rank for another skill of the next highest rank. For example, you could give up two minor skills for one more major skill, as well as trading two major skills for one more expert skill. This trading goes both ways, so you can trade one expert skill for two more major skills if you'd like to be more varied and less specialized. The skill list is as follows -- if you have any question of how a given skill translates into the roleplay medium, just ask.

Combat: Athletics, Long Blade, Blunt, Axe, Spear/Polearm, Block, Heavy Armor, Armorer (includes repair and smithing)
Stealth: Sneak (includes Pickpocket), Unarmed, Lockpicking, Light Armor, Acrobatics, Short Blade, Mercantile/Speechcraft, Marksman (encompasses all ranged weapons, not just archery)
Magic: Alteration, Conjuration, Destruction, Restoration, Mysticism, Illusion, Enchanting, Alchemy
How will you be balancing the skills in this roleplay? In my experience with Elder Scrolls RPs, without some system for what skills your characters has, some characters might become "overskilled" and severely imbalance the roleplay, like being a master of destruction spells and a master of hand to hand. Not like some ruleset with numerical stats or anything, but sort of like selecting major and minor skills for a custom class like in the games.

A good friend of mine named Dervish (who is the bomb dot com when it comes to Elder Scrolls RPs in my opinion) came up with a skill system that we can use, and I don't mind explaining it if you're interested.
Very interested! Would like to know how you would handle magic in this RP. Will it be a low magic setting with magic only through like magic weapons and artifacts (closer to the realistic side of things) or will players be able to make spellcasting characters (closer to straight up fantasy)?

I'm not interested in a magic based character myself, but I'm still curious. Looks very promising, I hope this gets more popular!
Urgh. It's with a great deal of regret that I'm going to say we're on an indefinite hiatus for now. FM and I (although moreso me, because FM is lazy) are both so busy with our jobs that we can't devote enough time to this project to give you all the Zelda goodness that you deserve.

I will still maintain a presence on the guild, so don't think I'm retiring for good (all you Chanda fans out there can breathe a sigh of relief), but I simply do not have the time or energy to do this thing right at the moment. This RP has a lot of potential, but now just isn't a super great time for me to handle all of this. It is not done for good.

"Well, hmmm," wondered Mr. Teko, obviously pondering Teruk's question about the title deed. "It has been a while since I've brushed up on my mercantile law, but there are two conditions under which a merchant must hold a title deed. The first is when operating on the premises of another business, in which case the deed must be endorsed by both the local authority and the owner of the aforementioned other business. The second, more common situation is when operating in a region in which you don't claim residency. Because you don't pay taxes or duties to these foreign kingdoms while operating there, you are required to hold an official title deed to conduct business in order to limit the number of un-taxed merchants affecting the local economy," explained Mr. Teko, wearily taking a seat. Treka, still a bit woozy, rolled over and closed her eyes, obviously in need of some rest.

"Because we scrubs so frequently leave the swamp to peddle our wares, it is a common misconception that only we need title deeds. However, technically any merchant needs a deed to operate outside of their native region, with the exception of the Carnival season, when the mayor's office distributes temporary permits to qualified merchants. Some of us scrubs have permits, while others, like Treka, who will be staying here for a while longer, hold title deeds. Unfortunately, because our people have a reputation for being... 'enthusiastic' salesmen, regional authorities have a tendency to be more thorough in checking our credentials than those of merchants of others races," he added, with a weary sigh.

"However, a canyon title deed shouldn't exist at this point. After all, because no one is allowed to leave Ikana, all merchants who operate there must claim residency, thus eliminating the need for a title deed in the first place. A valid title deed would allow a merchant to enter and leave Ikana as he pleased, something that hasn't been possible for 25 years. Whoever this old man, he has a very special privilege indeed. A deed like that would be worth a lot of money to certain people," continued the elder scrub, stroking his non-existent beard.

"I agree. It would be most wise to warn this swordsman as soon as possible. I would very much like to know what he did to attract this unwanted attention," advised Mr. Teko, still worried. "I will stay here with Treka in case the old man comes back again. Perhaps you could seek out the scrubs in other districts and tell them to keep an eye out for this strange hooded man and our blue-caped swordsman?" he asked. Mr. Teko seemed more troubled than he'd been in a long time.
