A spam-themed video game would appeal to an incredibly niche market consisting of maaaybe twenty or thirty people, and would in all likelihood be both a commercial and critical failure, regardless of its genre or plot.

A Spam video game would be a parody game that makes fun of common video game tropes and mechanics. For example the characters would probably ask at least once how they're able to carry so much at once and act like they're carrying nothing. Speaking of characters, they'd be snarky and maybe a bit nerdy and constantly leaning on the Fourth Wall. The plot would be about fighting against change, even though there was never any change in the first place and everyone's just complaining about nothing. Another possible antagonist might be the essence of randumb.
Literally Eve Online. No Plot. No Protagonist/Antagonist. Just a Sandbox World governed by very few rules and more or less absolute freedom. The Players, not the Developers, would fill the Spam Game with content. The Developers simply give the Players the tools to do so.
It would be hyped up to hell and never finished.
