I think you're mistaking it for leviathans. Dean and Sam had leviathan doubles. I think he wasn't possessed by a vampire soul, more like Soulless Sam allowed Dean to become a vampire by allowing one to infect him with its blood because he's a dick without his soul.

I'm a big supernatural fan, it's sort of obvious that is an edit you can see when his eyes turn black it's a little messy. So it's obvious it's an edit. Dean was never possessed but before his trip to hell I think he had like a dream or something about fighting his demon self if he ever does succumb to torturing souls.
