Well, I'm back from my trip and managed to complete the sheet on the way back. I'll correct any mistakes tomorrow.

Monaghan

Name: Monaghan

Gender: Male

Species: Sableye

Ability: Keen Eyes (Prevents accuracy loss.)

Concept: Wily Merchant. Monaghan sells things. He doesn't sell anything specific, just things. Things that he finds lying around, things that might come in useful later on, things thatlook useful but aren't. He doesn't own an actual store, preferring to carry around his inventory on his own back. Monaghan knows how to talk to people and convince them, and his intuition often leads him to profit from most deals. He prefers to simply avoid conflicts whenever possible, but is not afraid of pulling cheap tricks to come out on top. In fact, "fighting dirty" would be the best description of Monaghan's style. Both on the battlefield and on the storefront, Monaghan targets the weakest members of a group to prey on with false promises and non-damaging moves. His knowledge of the underground makes him a good guide, especially for those who don't know any betteraren't familiar with the depths.

Trouble: Greedy Bastard and Not The Chosen One. Perhaps as a result of his unique diet, Monaghan loves money. He loves the power it holds, even in the uncivilized parts of the world. To Monaghan, money brings in happiness, power, gems, and status. He measures people's worth by their riches and is willing to do anything else to increase his personal worth. And perhaps, for the right price, he might even turn on those who he trusts and confides in.
There is also the fact that he isn't one of the champions. He holds no greater purpose foretold in the seer's prophecy. He was born a Pokemon and will die a Pokemon.

Stunts: Because he is a level 5 Sableye, Monaghan knows Zen Headbutt, Leer, Scratch, Foresight, and Mean Look. (A bit of a mouthful. Zen Headbutt is an odd move for a Sableye to have)

Also, how much knowledge will the former humans retain? Will they know what the Pokemon species are called, how different fruits affect them, etc? Or are they just a completely blank slate?

In short, a greedy bastard that has plans on starting a shop so he can sell valuable items for delicious gems. Tags along with the naive noble band of adventurers to sell them cheap items at an inflated price lend his knowledge of the underground and amass a collection of rare items to sell later help them on their quest.

You may start as any Pokémon that evolves at least once,

rule? I'm planning on playing a Sableye if there are enough protagonist characters.

Definitely interested in this. Maybe as a merchant character.

As for the system, I guess it would depend on how many players we have. Rolls and stat-tracking would work well with a small group of people (hell, maybe it could turn into a tabletop gaming session) but with a larger group, things like that start to get a bit messy.
