Well when you say "nothing is original" and you use that as a reference for the claim, it implies you think nothing is original because they follow simple plot structures and I disagree.
Categorization isn't saying "original" is dead, but as a human culture, we tend to tell the same stories throughout time. What changes and what innovates these stories is changes in modern society, in technology, in belief, etc.
The tropes are the same, but the paint is brand new.

Except, I also included "tropes are used because they're effective". So you'd think that would potentially imply they're versatile for it. (Hence, the same trope can be used multiple ways, and still be that trope.) Or the context of "all stories can be narrowed down" which directly states, when you trim fat you can get the same results. Acknowledging that fat (unique flavor) exists to trim in the first place.
