I like starting from the bottom instead of being a bad ass ex-marine (there are no ex-marines, but you get what I'm saying) zombie killing machine who has plenty of years of experience in situations like that.
I'm a senior NCO who knows plenty of people from every branch. There aren't a lot of military people who could transfer their skill set easily to a zombie outbreak. If a military character (outside of SpecOps--who won't be allowed anyway) has any real advantage in the situation, it's the conditioning to operate through stress (but after a year in that's cancelled out), firearms handling (also cancelled out by now) and leadership.
I'm sure if you want to play someone more or less 'new' you can, you'll just have to come up with an angle that lets you do that.
