Regular magic changes things directly. It's blunter, messier. It can probably do a lot of, if not all of, the same things that the Sevenfold Covenant can do on the surface. Both a new kidney and a kidney dialysis will clean up your blood. But the Covenant is cleaner and more efficient. It fine-tunes the universe so that the universe will do things for you, just like a new kidney will clean up your blood without the work a dialysis requires.
