Don't think Demons is wide enough to be considered a Domain to be honest. It seems like something that would come under 'Magic' or - as Cyclone suggested - 'Evil', or 'Occult'
In fact, you could go go for Magic (Pacts) - so the pacts will be binding due to the magical nature of the agreement...and it would also mean that you could grant people some kind of 'Pact' magic which makes them create magically enforceable agreements...
Though mind you, Astarte is already a goddess of Magic

Domain (Portfolio) Description: There would be nothing in the universe without the basic process of creation. Someone or something needs to create it before it can be used or altered. Avanya takes a different approach to the art of creation, as she has little interest in lifeless objects that bends to the wills of others.
Her creations are alive and well, most of the time anyway. A planet, city or house could all be beasts with basic intelligence that needs to satisfy their own needs. Objects and tools may be a lot more difficult to handle if they were created by the beastmaster, but it’s not of concern to her. If she’s feeling generous, she might even make them less prone to running away or attacking. She makes beasts with all manner of characteristics, but favours those who are dangerous and vicious.
Avanya offers little explanation or motivation behind some of the beasts she creates. If it can be done, it should be done. If it can’t, she is eager to try anyway. Others would consider spliced animals that can’t function normally failures, or at least unwanted results of bad design. Avanya loves them as much as what would constitute a success.
Alignment: Chaotic Good
Personality: Avanya is proud of her creations and loves them dearly. She would like to protect them all, but knows that it is impossible in a universe that is cruel and unforgiving, so she tries to make them all able to protect themselves. Many of them are just not capable, but dangerous to other creations as well. She is susceptible to those who pander to her ego by showing her proper respect in the form of offerings, flattery or writing literary works about her.
She’s willing to help those who show respect to her creatures, or animals in general, but wouldn’t do anything to help someone who has been cruel to one. Avanya enjoys nothing more than to create, and get praised for whatever result she ends up with. Sometimes she makes useful creations just to get praised. Often she makes whatever she feels like to improve her own skill.

We will get along fine since I mainly focus on one thing. Any deal that Vakarlon feels like making. Example:
Mortal: "Oh, great deities, I pray that you grant me good fortune."
Vakarlon: "Can I have your soul in exchange?"

That'd be compassion and companionship for fellow elements of creation, for all those made in God's image, and for those who despite infinite unworthiness gained the sacrifice of Christ. It's a far cry from sexual love; a better explanation would be kindred love. It's way more universal that most definitions of the word, as are most concepts in relation to an omnipotent, monotheistic God. That kind of universality is not really a factor here, since in this story there are many gods with separate domains, rather than a single God over everything.
So it's something of a case of apples and oranges: applying monotheistic concepts to the polytheistic system we've made here.

I just realised that I may have come across as derogatory - I was using that example more as an instance of love being far wider than 'you look nice, get into my bed'. Completely agree with all that you say other than the last bit: I don't see why we shouldn't have divine love (as in, creation's love for the creator/s) in this RP - Zerabil certainly had it/aspired towards it, and I think any realistic god RP must include a certain level of creations having devotion/love for their creator/s. Hinduism is the last polytheist religion in existence, and the concept of 'love' or at least attaining 'one-ness' with the divine is a thing. But these are just my musings xP
