I thought it was pretty simple. Light parts were land, dark parts were water. But then again, that's just me.

What exactly classifies as "Culture"?

Culture is one of those things that's hard to explain, but relatively easy to do.
Write what your people are like. What makes them recognisable? What is so distinct about them that says 'I come from such and such'? And why do they do that?
Like I said, I'm not very good at explaining it. I'm sorry I can't be more helpful.

Hmm... Let's go with roughly the size of Asia in terms of physical size.

Think about your race. Creatures with longer lifespans usually breed less in fantasy, so larger population means lower life expectancy.

For a real life example, some estimates put Englands population in the Mid-Middle Ages between 3 and 5 million and Europe was a little more than 100 million. That might help.
