I know his personality wouldn't change that much but i thought i'd bring it up to give squall more options
I dont mean sevants in general. Gil is a special case and i got my information from the type moon wiki it self and here is an excerpt from it
"He is influenced by the era in which he is summoned, causing his blood as a human to stir and gravitate towards that of the humans of the era.[5] The consumption society of the early 2000s sullied his property, the world, so he is in a worse mood overall. Even with his personality, Gilgamesh was able to blend into the society without a problem.[8] While he will always retain his core self-centered traits, he will be more stable and like he was in life when summoned in a place without any alteration like the Moon Cell.[10] He is quite different between the Fourth and Fifth Holy Grail Wars due to his priorities. He simply enjoys the events of the Fourth, but the Fifth is utilized to fulfill his goals of making humankind worth governing and coercing Saber to become his bride. Kinoko Nasu describes the variation in his personality as the "prideful Boss King of Heroes" and the "not very prideful Horny King of Heroes."" -http://typemoon.wikia.com/wiki/Gilgamesh

Also as squall said this is and alternate version so society could be diferent from how it was in the original stay night
Or you could have Gil offer help and in return the person he helps has to do what he says and be his servant. And it wouldn't be completely out of the question for Gil to help random people since he takes on the traits of the era he's summoned in, and since this is an alternate universe/timeline society might be a little kinder and he might do it on a whim.
Just noticed the second page and i guess ill take saber as my servant then
I'll make a master then

Name: Eryth Millfall

Age/Age appearance: Looks to be late teens to early 20s

Master or Servant: Master

Who is their Master/Servant: Saber

Weapon(s): Dual Derringers named "Golden Dawn and Nameless" and a Support Minishot "Babel Range"

Magic (master/caster only): Alchemy and Minor Time Manipulation

Appearance:

Personality (can be left blank): Eryth is somewhat serious and is confident. She will do what it takes to get the job done but dislikes killing innocents.

Bio: Eryth Millfall is a mercenary working for the RosenKreuz Foundation, and is known as the "Black Grim Reaper of the Skies." She prefers to not use magic as she is not an expert but can still use some lower level spells and can use most alchemy provided she has the materials to do so. Even with alchemy and magic Eryth still prefers to use her guns and mostly uses alchemy to support her guns in combat by making more ammo.

Hazama replied to Cerebella "I think ill be fine, I'm Hazama from the Novus Orbis Librarium Intelligence Department, I think my rank was, Captain." He continued to look around to see what kind of people were here. Upon hearing the Gamemakers explanation he said "So im now part of a game, am i? Well I did want entertainment." He mumbled the last part to himself. After seeing the figure appear he got an idea, He moved closer to Toby and wispered so that only Toby could hear him. "Hey, ten dollars if you see what it wants, ten more dollars if you try to kill it afterwards."
Hazama slightly annoyed at being ignored walked further into the group and stands within a few feet of Toby. "Hey, you know, it kinda hurts when you ignore me like that." He says to the rest of the group raising his voice slightly while dropping the warm hearted traveler act.
