The prevailing theory that I have is that its miasma... A sort of heavy aura that affects one heavily with negative emotions. My guess is that the bear uses this gunk as a way to project that miasma to weaken its prey and eventually consume its life force to sustain its form.

Eve: In other words, it's a danger to everything around it and it'll be hard to do battle with alone. You need several people of incredible strength to kill it.
