He smiles.

"How bold."

Chuckling he says.

"Should be very good. Stuff the filet with the shrimp or at least some of it. It has been a few years since I made beef wellington. My mom loved it though it was kind of pricy for us to have too often."

"Are you saying you never had beef wellington?"

He smiles over at her.

"I think we should get started with making it."

He stands up and walks into the kitchen. He begins preheating the oven then grabs out some puff pastry from the fridge along with the filet and the shrimp. He cuts the filet into 4 inch steaks, slicing them lengthwise and stuffs the shrimp after cleaning them up. He grabs out a package of mushrooms and processes it into a paste. He smears it over the steaks and places it on the puff pastry, rolling them up and brushing them with butter. He places them on a cookie sheet with parchment paper, tossing them in the oven a few seconds before the beeper goes off for the preheating.

"You are gonna melt for this like the filet will melt in your mouth."

Ele hopped up on the counter like she had before, watching Tyler work. Kicking her legs gently in the air, Ele smiled,

"It looks amazing. So how did you learn to cook like this?"

"Loved helping my mom and sisters in the kitchen growing up then when I got into my teen years I discovered that I had a gift with it. I love cooking but I love toys just as much. Like the song says 'the only difference between men and boys is the size of their shoes and the price of their toys.' so growing up I decided that business for me would be selling toys."

He chuckles.

"If I am not playing with rc's or slot cars, I am usually cooking and coming up with recipes."

He looks at the last section of beef tenderloin smiling over at Ele.

"Have you ever tasted raw beef?"

The story was sweet, and it made Ele smile. She wished she had had that kind of life with a family that loved her. When Tyler held up the beef though, Ele leaned away from him looking wary,

"Steak tartare was never a menu option for me."

"Not even tartare. Just trust me on this."

He slices a piece of beef that is partially see through. He grabs a blood orange from the fridge and squeezes some onto the beef with a little salt.

"With how thin it is and how tender the steak is, the citrus will partially cook it. It is like rare steak though it is completely raw. You would be amazed at the flavor raw."

He pulls on the steak and it pulls apart. He tosses the piece in his mouth and closes his eyes.

"I'll try it."

She said, raising an eyebrow at Tyler.

He hands her the other half of the steak.

"It is like the most flavorful steak you will ever taste. It will taste slightly metallic because it is so rich in iron, but when I worked with Vale, I would join him when he went grocery shopping and often he would try the steak raw cuz if it was good raw it would be more suited to grilling. He would use lower quality steak for sandwiches and stews."

Ele shook her head and handed the steak back to Tyler,

"No, make it how you just did. I want to know what that tasted like."

Clamping her mouth shut for a moment, Ele looked bashful, then apologetic,

"Sorry, that was really bossy wasn't it? Sometimes I sound a lot meaner than I mean to. Kate says its how I got to be as high up in my job as I am, because I sound like a boss."

Narrowing her eyes, Ele took the beef slowly. She quickly popped it into her mouth and closed her eyes to focus on the flavor. It was quite good, but the texture of the raw beef make Ele shudder as she swallowed.

"Flavor gets two thumbs up,"

She said holding out her thumbs and opening her eyes,

"Texture was a little too..."

Ele shrugged then smiled,

"A little 'under cooked' shall we say?"

"Texture is something you never really get used to. You will either love it or hate it. But one good thing about having it raw is that it is the most tender and the most healthy for you. Cooking it, you lose some of the nutrients."

As they stand there the smell of the beef wellington starts filling the air, smelling like a roast was being made with biscuits.

"I love sashimi and sushi, especially smoked salmon and spicy tuna. Lots of people that I have found that say they hate sushi have chewed it for way too long, as much as I love raw fish even I can't chew it for too long."

"For a long time I couldn't eat seafood at all,"

Ele said, picking up a scrap piece of pastry and rolling it between her fingers.

"I would get physically ill at the smell or sight of it, but I started to get introduced to it by people who knew how to prepare it well. It was probably too many fish sticks and canned tuna as a kid."

Rolling the pastry into a long thin piece, Ele coiled it back up, focusing on it as she spoke. It was strange to her to be talking about her personal life, even if it wasn't anything bad or ugly, it was just unsettling,

"Moving to San Francisco and having super fresh seafood at hand, made the transition easier by far."

"Don't have fresh seafood here, freshwater after all, but we have so many kinds of freshwater fish it is amazing. Just in this county I have caught, sucker, catfish, bass, sturgeon, pike, muskie, trout, walleye, bluegill, crappie, perch and pumpkin seeds. Which I am sure you probably haven't heard of pumpkin seeds, they are like bluegill but instead of being blue around the gills with orange on the outside of the blue the entire area is orange with spots that look like pumpkin seeds."

He flips on the light for his oven, looking in. The puff pastry getting light brown.

"3 more minutes and we will pull it. Only want it rare to medium rare."

"I have heard of about four of those fish, my aquatic foods palate is still forming. I tend to stick to clam chowder, salmon, shrimp, lobster if I'm feeling fancy..."

Squishing the pastry roll and making it into a ball, Ele shrugged,

"Muscles make,me,gag though, they're like salty wads of pre-chewed gum. Bleh!"

Ele stuck her tongue out and visibly shuddered at the memory of the shellfish in her mouth,

"My first taste of it was at a fancy gala dinner, and I was disgusted! I had to swallow it though or I,risked offending the host!"

"I have access to fresh mussels, I mean as fresh as you will ever get. They are very hard to get right but I have a recipe that if you don't like them, you will never like them. They are baked on the half shell with bleu cheese and chives."

He shuts the oven off and pulls the beef wellington out. He grabs some leftover mashed potatoes from the fridge, frying them with a little cheddar cheese while the wellington settles. He cooks the mashed potatoes quickly before grabbing a slicer, cutting the food into quarters, and seasoning it with just a little triple pepper grind. He plates the potatoes first, topping it with the beef wellington. He grabs each of them a fork and knife, serving her first.

"If you can't finish it don't worry, I have eaten the wellington as leftovers and they are still really good."

"Of course."

He walks through the kitchen, sliding open a curtain to reveal a set of patio doors. He steps down onto the deck, the deck is nearly as wide and long as the house, covered with tin and open ended. He walks down to the end and sits down on a futon. Sitting on the futon reveals just how far back his house sits. Only 20 feet from the forest. Birds flying from the tree's to the deck to grab some seeds, chickadee's being the curious birds they are land within a few feet of the futon to look at the food before flying off.

"If any bird will land on you or near you, it will be these birds."

"They're much cuter than the pigeons in the city."

Ele said, taking a seat and picking off a piece of the pastry. Holding it in her palm, Ele extended her arm and waited. It didn't take long until a curious little bird flitted over, hopped around a bit, and then landed on Ele's palm.

"There you go, little friend."

Ele said softly, watching the bird peck the food in her hand.
