So, after posting in the video game thread, it dawned on me that RPG is missing a culinary thread to chat about food and share cooking tips and tricks. And with how many people were/have been taking up cooking, baking, etc. during the Covid-19 pandemic, I figured now more than ever would be the best time to make such a thread to discuss what goes on the kitchen, the grill or wherever you might be whipping something to eat and/or drink.

I'll start us off: What's for breakfast/lunch/supper?

We had some toasted BLTs just a moment ago. Had a bunch of bacon given to us by a family friend of ours, so we needed something to do with it. With some farmer's market tomatoes, it was pretty satisfying even with the minimum effort needed to make a BLT.

I think this is a wonderful idea!

As for what I had for dinner, probably going to eat the rest of the veggie enchiladas we made last night for dinner. They were made using corn tortillas and the filling is black beans, white onion, and corn. I like to top mine with some sour cream, hot sauce (my choice is sriacha), queso fresco cheese, and some raw onion because I'm a huge fan of them. Love that sharp bite they give when not cooked.

I have certainly been cooking (and eating) more food over these past few months. (If my few extra stress pounds, have anything to say for themselves. <.<')

Because I've always had an interest in cooking and trying out new foods. And I even intend to grow my own vegetables at some point. Whenever more of my pretty flowers die off. Plus, I still need to use my nifty-looking backyard stone grill. (Though I won't lie for a second, and claim that I've made anything complicated.) Because I tend to cook (and clean up) for more than just myself, and I have enough household chores and yardwork maintenance as it is.

So on that note, I can give you a run down of my last three day's of breakfast/lunch/dinner.

Monday's Breakfast: Made some Mixed Veggie Stir-Fry/with white rice.

Monday's Lunch: Nothing/Maybe snacks I didn't make. (Since I don't tend to eat three meals a day. And aside from these past few months, I never really snacked much either. ^-^')

Monday's Dinner: Chili Dogs (Hardly counts, I know. And I didn't even get to use my grill either, because it was raining all day. :c)

Yesterday's Breakfast: Coffee? :D (I skipped it, because writing. Oops.)

Yesterday's Lunch & Dinner: Made some Eggplant Fettuccine (I made a lot. ^-^')

Today's Breakfast: Made some Over Easy eggs. (And stuck some Eggo's in the toaster. With some organic maple syrup. I know, I still cheat.)

Today's Lunch: A blueberry (yoplait) yogurt and a small slice of my first homemade cheesecake.

Today's Dinner: Made some very tasty Tuna Melts.

Yes, I know it sounds like a totally balanced and healthy diet. I thought so too.

Tonight for dinner we had meatloaf, mashed potatoes, and roasted carrots. We didn't have any gravy, so I had to get creative. Ended up making a tasty sauce with balsamic vinegar, ketchup, salt, pepper, and honey. Might sound unusual but it went brilliantly with everything. Also had a side of garlic bread.

We ate good at Casa de metanoia today!

Funny; I'm planning on making a meatloaf tomorrow.

Never did anything fancy for the meatloaf, really. Most of the time we would just slather some ketchup on the top and call it a day. Though, I imagine it is mostly in part due to the picky appetites of my younger siblings. More often than not we had to make a brown sugar meatloaf opposed to more traditional meatloaf that'd have, say, onion and other miscellaneous "ew" stuff (according to my siblings) in it.

Yeah you don't need to do much to meatloaf. It's one of those timeless dishes that is kinda ideal in how it's typically prepared. I use ketchup when I make it too, but my dad is on the tomato paste side, which I like too. Today we prepared it with the latter approach + some julienned peppers on top.

Though, that brown sugar meatloaf sounds kinda dope.

My old roommate liked making meatloaf. (Usually put some onions and bell peppers in it.) And it was usually pretty tasty. I'd usually help by making some garlic mashed potatoes with it. (The not lazy way.)

Though today I made some beef tacos w. various toppings. (Which was easy, and quite delicious too. :3)

Putting on the to-do list: Use the Magic Bullet that I have, some day. (Any suggestions?)

I decided to have breakfast for dinner today and that ended up being a mushroom-jalapeno omlette topped with a honey-habanero salsa. Cheese used is cheddar and munster.

I've never had meatloaf before, it's not a common dish where I live and it's not really something I think seems appetizing.

I've been very slowly over time making a transition to a plant based diet. It's too hard to do it overnight!

One of my favourite vegan meals that I've been making often is buffalo cauliflower wings. They're so yummy.

I'm thinking of making some burrito bowls for our dinner. Breakfast was tofu scramble.

Meatloaf's alright, in a kind of a "comfort, homecooked" type of way. But yeah, I can also see why people wouldn't care for it. Meatloaf is more or less just a giant lump of hamburger molded together and thrown into the oven. It's also a band/stage name for Michael Lee Aday, but that's a completely different meatloaf we're talking about.

Anyway, I don't think a fully plant-based diet is for me. Like, sure, I wouldn't have a problem with it, but I'd miss stuff like seafood. A pollo pescetarian diet is more fitting IMO for me, which I already tend to fall in line with said diet. All I would have to do is cut out what little beef and pork I eat since I already eat mostly seafood/poultry products. Sometimes even plant-based stuff, like the spicy black bean burgers I've got in the freezer right now.

Cauliflower wings are good, though! Haven't had many opportunities to have them, however. I think the last time I had some was back at a local pizza joint around here.

Fair enough! I actually am really not too keen on hamburger meat, as it happens! I was saying to a friend how I'll always take a chicken or veggie burger over a meat burger xD

I think seafood is a big one for me too and is making it difficult. I actually think I really benefit from the fish oils/omegas so I'm struggling with this - but if I could make everything else fully plant based I'd still be cool. Diets are hard enough.

I will raise this thread, back from the dead.

Made some Cajun Chicken and some Cheese Ravioli for dinner. A tasty combination.

I've offered to cook my family's thanksgiving dinner. So we could have it at my house. And so I can make & eat some good potatoes. (But we might end up just going out to eat. I dunno.)

What's everyone else been cooking lately?


In a "don't knock it, till you try it" of the day. I made a Buffalo Ranch Shrimp Salad for lunch. (It was only sad, when I found recipes for it online, after the fact.)
