That's a reason I love Monster Hunter: rather than saying "magic," most (if not all) monsters' abilities are rooted in real science (for example, Astalos' thunder abilities are the result of piezoelectricity).

I'm a fan of the bombardier beetle's ability to spray incredibly hot chemicals at its enemies. Though the names of said chemicals elude me at the moment, it does well to explain fire breathe.

According to the Wiki, most monsters have a Flame Sac, which contans compounds that ignite when they come in contact with the air. Personally I'd find something akin to Reign of Fire's dragons (two glands in the mouth secreting chemicals like a bombardier beetle; GoT's dragons borrowed this) slightly more realistic.
