They didn't use bullets in the movies. The mechanics of blocking a bullet with a lightsaber are somewhat less forgiving than those of blocking a blaster bolt, and even if they manage it, they've still got a spray of molten mist to deal with.

And like I said, even if it didn't kill them (and it usually took a lot more than one bullet to get the job done), it broke their focus on their prep and forced them to devote their energies to a defense instead of their attack.

I always assumed they could use the force on metal bullets, especially at the rank of master.

Only if they get their shield up before you fire. And even then, every bullet blocked puts strain on them, and they can't charge an attack while their shield is up.

If they're writing it correctly, wearing a helmet with a HUD and armor control systems screws up the focus they need to use their powers effectively, so high tech armor actually reduces their ability to use force powers even though it gives them extra defense. There were those that wore really durable body armor, but it didn't have a helmet or all the bells and whistles you'd get with a suit of mandalorian armor, so their head was still unprotected.

Vader could only use a fraction of his power because of his reliance on cybernetics, and Revan's mask didn't have a HUD (that I'm aware of).

I think a well placed shotgun shell to the head of any force user would be more than enough to kill them.

But that's because on a biological scale they're not super soldiers/

In theory though there would be nothing stopping an adept force user (like Mace Window) from immediately seizing your gun, or even deactivating it in your hand with the force.

Getting that close to a force sensitive would be nigh on impossible though. They don't even have to see a lazer to see it coming, so wandering up to a Jedi and putting a gun to their head without being sliced in half, I would go as far as to say, be completely impossible.

I suppose, but at that point they'd probably be using a lightsaber anyway, at which point the argument is null and void.
