Also, I'm well is grammatically incorrect :P Unless you're saying you are healthy and fit. Then it's fine. But that's not an answer to "How are you?" However, you can say "I'm doing well." "I'm good" is technically an answer to the question "Are you a good person?" since good means "morally correct".

Not quite. "I'm good," in the sense of morality is little used, and makes no sense in the given situation. "I'm doing well," in accordance to the fact that she isn't sick, nor in any kind of peril, is the grammatically correct road.

I'm well = I am well. Well is an adverb in most contexts, and therefore (in those contexts) you can only apply it to action verbs, not linking verbs. "Am" is a linking verb. However, "I'm doing well" is perfectly fine.

"I am well" still applies because "well" is also defined as "lacking misfortune." Because things were generally positive, she was well. Not physically or mentally ill. At peace, to an extent.

According to most dictionaries, well in its adjective form is only defined as "in good health." However, hundreds of years ago, it could also be used to mean "Prudent." However, neither of those fit what you're saying right now.
