Sunshine is a solid Mario entry, apparently it's pretty challenging. It's a 3D Mario Platformer; it's hard to go wrong with it if you're looking for that kind of game.
Luigi's Mansion is actually a fantastically fun game I wish I got to play more of because I never owned it. It's pretty unique, charming, and quite enjoyable.
I only owned Metroid Prime 2 (3, I don't think, came out on the Gamecube) but it's probably the most mature of Nintendo's first party franchises and it's a fantastic adventure game with a great atmosphere, sense of discovery and exploration, and while the controls are a bit wonky given the weird layout of the GC controller for a shooter, it's a really solid choice that's very fulfilling. I have a feeling I'd get hooked on it again if I played the game again.
Double Dash was great, but I was probably the only person ever who didn't care for the two-man mechanic. But it definitely earned it's stellar reputation. I never owned it, but I played it with friends all the time.
Depends how you define success. It lagged behind the Xbox and PS2 in sales and had such a limited online functionality you had to buy a separate attachment and only a small handful of games supporting online play, as well as it didn't have a lot of third party support from major publishers that the PS2 and Xbox had, which is part of the reason I went with the 360 next time around, which I feel was a solid choice, given my tastes in games. However, if I had all 3 of those systems, I think the Gamecube is the only one I'd still be playing today. Something about it feels kind of timeless and like the system itself will never die, and I enjoy the hell out of most of the games I own for it.
And I think Melee is the best Smash Bros. so far, I definitely sunk a shitload of hours into that one.
