Yep! Good question. Nick and Aurélie have the ability to hear what's going on in the control room, so they did hear Von Galloes give the ultimatum and Thierry's response. Von Galloes has the ability to mute and deafen either side at a whim.

Thierry realized that he can't save his daughter without Nick's help. Because Nick is right there in the room with her! He's an agent, but she isn't, so if Nick gets free, he'd help her. Not necessarily the other way around... at least not in Thierry's mind.
