"Mmm. Thank you. I'll be ready shortly."
Ryan replied cordially. Scanning over his menu, he liked the fact that there were several spicy options, as he prefers his food on that side of the scale. Browsing through the options, he was mentally coming up with random combination and naming them. Like combining garlic, nuclear and a sprinkling of Carolina Reaper and calling it Vampire Slayer. Combining Pineapple, teriyaki and a sprinkling of garlic and calling that Hawaiian Luau. Alas, he was getting carried away.

Focusing back quickly, he looked back up to the person he had be speaking with (I'm not sure if you mentioned his name yet lol) and said "Uh. Can I get two small order of wings? Can I combine the garlic and nuclear sauce with a sprinkling of the dry Carolina Reaper for one of them? For the second order, can I combine the pineapple and teriyaki sauce and add a sprinkling of the garlic dry rub? Thank you." Ryan finished and offered a small smile to the person.

Nodding softly as the man at the bar greeted him and sat him down, Ryan picks up the menu and looks it over absentmindedly. He alright has a idea of what he wants but he wants to make sure he wasn't missing some sort of special feature. "Wings. Burgers. Typical bar fare... Hm...." He thought to himself.

"Uh. Yeah. What sauces do you have for your wings? Do you have some dry rubs as well? Oh and I think water is fine for me.. Thanks.."

Ryan said to the man behind the bar, wanting to explore all of his options before ordering something.

The soft thumping of a sharp blade against a cutting board was predominant sound coming from his kitchen. Though, the bluetooth speaker be bought a while ago is being put to good use. The sous chefs have decided to play music, in a random order, from this playlist.

Head-hopping slowly to the songs, Ryan swiftly chopped up some garlic, mashing it into a paste-like creation along with some salt. Setting the garlic paste aside in a small mixing bowl before adding some freshly grated wasabi in place of the traditional dijon mustard. He figured the spice and taste would suit his menu selections better. Olive oil would have been the next ingredient to be added but Ryan chose sesame oil instead. But, taking care to not use too much of the fragrant oil, he actually uses only 1/4 sesame oil and the other 3/4 was filled with canola oil, a fairly neutral oil that would have allow the taste and fragrance of the sesame oil to still come through without it being overwhelming. Taking a second to ponder his next addition, he was trying to decide if he should stick with balsamic vinegar or go with something more Asian inspired. He stared blankly at his shelf of oils and vinegars. Sure, he has rice vinegar, but would that be a cop-out? Taking the easy route was never something Ryan did with his cooking. He constantly looked to innovate and to challenge himself to strive to be better than he was yesterday. Fuck it, he thought. He is going to stick with balsamic. The faint sweetness should highlight the natural umami present in the produce. Giving the mixture a sprinkling of sea salt and freshly cracked black pepper, he got to whisking. Vigorously, in fact. After some time. Ryan paused and took a taste. Giving himself a satisfied nod, he waved one of the other chefs present to come over and have a taste. "I'm thinking about using this as the dressing for the produce for tonight's salad. Let me know what you think..." For someone with as much confidence in his own skills, he always sought out opinions and critiques of his peers. Especially those who work with him. They see him work and think and tweak recipes day to day. They, in his opinion, have the best understanding in what kind of food, atmosphere and feeling he is trying to create. The chef gave him a nod. "This would work. That wasabi, the punch, fucking great." Ryan chuckled. "Cool. I take it the prep is coming along nicely? Did the tuna and salmon come in?" "Yeah, they're in the cooler." "Ok, leave them unwrapped starting around 3. I think I'm going to go grab some lunch. There is a new place in town. Some tavern. I want some fuckin' wings.. You guys want anything or are you just going to cook something here?" The crew was rather silent. Wings did not seem to peak their interests. "Ok fine. Don't say I never offered to buy you lot lunch..." Ryan chuckled again. "Feel free to head home after three. Just be back around 5:30. I want to have a quick meeting before service."

With that being said, Ryan stepped out. Walking with a small hop to his step, he headed to the new tavern, curious as to what sort of offering they may have.

"Busy place... but then again, its the lunch rush. I guess I'll wait for a seat or some shit..." He thought to himself as he stepped into the tavern.

Letting out a lazy yawn, Ryan sipped on his warm Americano as he patrolled the market isles. The St. Alexus Market, named after a nearby bridge which was named after St. Alexus, is a local hub of farmer's market-esque produce, butcher, fishmonger, and other spice trades. Not only that, it is also quite popular with tourists. Though, at this hour, the only people around were the vendors and other local chefs that wanted to source locally.

Ryan, riding a hip electric scooter outfitted with a shopping basket, would occasionally stop and browse the day's freshest offerings. He saw some gorgeous fiddlehead fern, spring onions, radicchio and endives. "Hm. I think I can make a spring salad out of this, simple balsamic... Hi, sir, can I have maybe two pounds of each of those vegetables?" The vendor happily bagged up the produce and Ryan paid him. The price was not exorbitant but it definitely was not wholesale. Two pounds each will suffice since his restaurant is only open for dinner...

Continuing his round through the market, he stopped at a butcher stand. Yes, he owns a sushi restaurant, but he simply cannot pass up ingredients so fresh it speaks. Browsing the selections, he notices a center-cut loin of beef. "Maybe I can... hm. I'll buy some, age it, and try it. If it doesn't fit, I'll have some bomb ass aged beef for myself..." He chuckled to himself, then turned to the vendor "Sir, hi, can I get a pound of that center-cut loin there? Yes, that one. Thank you!" The butcher heard his selection, smiled as if he knows that Ryan knows exactly what he is buying and he is glad that Ryan is the one that chose that product. He wrapped the beef up in butcher paper, handed it to Ryan and Ryan handed over the agreed-upon payment and went on his way.

"Bro, that beef looked fire..." He mumbled to himself as he made his way to the seafood section of the market.

The air around him, as if this was Shokugeki no Soma, changed.

Taking his time to browse the catches of the day, a few species catches his attention. "Sawara...and sayori... Nice. Ok." Turning to the fishmonger, he says "Hi, sir, good morning. Yes. Can I take perhaps 20 of the sayor-I mean halfbeak and 15 of the Spanish mackerel? Thank you." The fishmonger smiled and said to him while bagging up the fish "Why so serious chef Woods? Is today the first day you're reopening your restaurant? How was your trip?" Ryan chuckled "Ah. I mean, I'm always like that. I'm not even trying to be serious. Yeah, I've just got back a few days ago, took a few days to get things in order again for the restaurant and we're reopening tonight. The guys might even be there now getting things ready. You and yours should come by tonight, to make sure I'm doing your products justice~" "Ah I just might. Here you go, all ready to go!" "It would be our honor to serve you, should you choose us tonight." Ryan offered a small bow, handing over his form of payment and taking the fish before heading his way.

Placing the fish in his shopping basket among the other things he bought, he gently pushed off his scooter and headed back to the restaurant, to make some more phone calls to his other vendors to ensure deliveries would arrive on time in order for him and his crew to prepare for dinner service.

Sipping on some tea he made at the restaurant, he takes a seat in the kitchen with all the ingredients he had just acquired laid out in front of him in an orderly fashion. "Ok, so... with the produce... I need to clean, pick, and set aside, then make the balsamic. The beef goes into the aging cooler.. Maybe I'll even cover it in suet.. The fish... sayori goes into the light salt and vinegar bath and sawara..half torched? Or just...as is... Hm......"
