You pretty much answered your own question. Though one might wonder why they would have lungs if they don't eat. Oxygen's sole use is after all to burn ingested food.

Already got some character ideas cookin' in me skull.
I guess part of the problem is the amount of characters, too much waiting on each other will kill a roleplay pretty quickly. Especially since in a battle you sometimes have to wait for someone even if it's your turn, cause your actions are dependent on someone else's. So it might not necessarily be a bad thing if some of us have already lost attention. Though we might not even be able to beat it with too few people in the team.

Anyways, i'm still here and mean to keep going. I'll pass this round though, charging the monster from the front wouldn't do me any good. Other than that, we're all kinda dependent on whether Raen is gonna use his flames of doom or not.

I'd forgotten about that theory. That means the Old Dragonslayer is in fact Ornstein (old-ass Ornstein), not just some look-alike. Yay for continuity :D
And i suppose that does justify the parry problem. Artorias' unparryability can be explained simply by his size (he's big even for a demihuman) aaand... that covers everyone, i think. Teh mystery has been cracked.

I've considered that too. Being somewhat of an anti-climax boss makes sense for him, considering he doesn't have a lord soul anymore.
Then again, Ornstein, who is both mechanics- and lore-wise weaker, is unparryable. It's just a matter of gameplay and story segregation, i suppose.
I just rewatched the fight on youtube and he can't be much bigger than 8'. Artorias might be bigger, but he's unparryable.
Then again that might not be because of his size but by virtue of being a boss. None of the bosses are parryable except Gwyn for some reason.
