Then it was Studio Deen. I thought it was a bit bland, but I like Fate zero much better.
Yeah, I think Studio Deen's version of the story is a decent starting point, but Unlimited Blade Works is better in almost every way. I suggest watching it after you finish Zero. The first half is basically the same with better animation and then in the second half it goes on its own story. Zero will always be my favorite overall though because of Iskandar.

I was talking more about overall quality rather than just animation, budget, etc. Just because something is newer doesn't mean it's always better.

Not necessarily, yeah.
I don’t actually think the writing in Unlimited Blade Works is all that much “better” than Fate Stay Night personally, but its production techniques and animation is certainly in a league of its own; though I’ve always thought that was because by the time UBW came out Fate was kind of a proven concept to give a bigger budget to compared to when the original adaption came out.
There's a reason UBW was nicknamed Unlimited Budget Works.
