Grass is the last trial on the second island and then you get Rock from Kahuna Olivia.

It's any move they are capable of learning. As for the previous point, Ash got his Electrium Z from Hala when most challengers would have got a Fightinium Z; thanks to Tapu Koko pulling a switcheroo.

I don't think that works for Kiawa trial since you have to memorise the dance pattern.

You battle it yourself. And you can choose between the Salazzle or the Marowak.
