I'm scared my character is going to be hit with the Uchiha angst, which is why I'm going with a custom clan, haha. I can't trust myself.

I think almost everyone went with a custom clan, along with a custom KG. I mean, if you have the possibility to add your very own thing to Naruto, why not? ^^

If you really want to play an Uchiha, give it a try. Characters develop all over the place after all and if you're afraid your character will end up with the "Uchiha angst", he might grow out of it. You never know where character development takes you, especially given the diversity of characters you'll be interacting with. There seems to be a lot of "Clan Crashes" going on here too, which is really interesting. I can see a lot of characters hating each other already, adding an Uchiha to the mix would be rather interesting xD.

I should probably say, the only canon characters in this RP are the Kage. All of them. Kaze, Mizu, Ho, every one of them will have existed in the world. THough the only important one will be Tsunade, as I will be playing her whenever she pops up.
