I'm actually pondering about whether to doll out professions by rolling for them a la the TT game - would anyone be adverse to that? (Yes, I know people have their particular favourites, so that's why I'm saying maybe.)

How about a bit of a compromise in between, i.e. someone can pick the approximation of their characters origins but you roll some of the very specific bits.

Indeed, I did think something like that may be the way to go about it.

If there is a profession that fits a character idea - Wizards Apprentice or Squire, for example - then they'll be used as a base.
