What kind of plot we'll we be having?
I'd say semi-sandbox. Major plot points will exist, but the stuff in between will be based on the decision of the players.
How many crews are there gonna be?
I'll say one for now. I'll be setting a cap on the number of participants to see if this could last.
Who's gonna be the captain?
This part's a little iffy for now, but I'll have to go with myself. It'll be easier to keep things progressive. Nothing kills a roleplay faster than stagnation, am I right?
Will our characters have knowledge of One Piece as a series?
Nope. Everyone will be clueless since One Piece wouldn't be something that exists in the reality they came from. Avoids people being know-it-alls and whatnot.
How strong will we be at the start?
Like any good Isekai, everyone starts off somewhat capable, but nothing too overpowered. Having the potential to be though, is always an option.
Any hard limitations on characters?
I wanna say yes and no. Part of One Piece's selling point is its wackiness, but being too strong at the start kinda makes things boring. For now, the limits I'm setting would be having no Giants and if you do choose a powerful Devil Fruit or ability, it'll be nerfed at the start. You know, gotta start from the bottom.

Don't wanna be too strict here since I want this to be more fun and about the adventure. I don't want you guys to focus on the numbers to much. That's gonna be for me behind the scenes. It'll mostly be me telling you that you've acquired certain skills and abilities.

Cannon characters won't exist, everything else, will most likely will. This would include organizations, islands, titles, worldly figures, et cetera. As for the timeline, it'll be at the start of the series. So its fair to assume that you'll be this story's Straw Hats.
