I'm assuming all of the jobs can be taken by one person unless they state such or are obviously too much for one person yes?

Yes once you are a member of the guild, you can take jobs. Only one at a time and yes, generally I will specify if a job needs more people or if it has a ranking such as S class and then you need an s class wizard with you.

One more question, is there anyone designated to the NPC portion of the RP, or do you write that yourself?

Typically I do that myself or Expolar and Zarkun will if I give them the information. I do actually have story lines for jobs and have NPC characters there, all in a Google doc so I can access it anywhere
