Like you can already see a bit, there is a very bubble and almost child-like personality hidden beneath all that.

Sapphire built a thick skin after several years of abuse from her distant alcoholic father. At heart though deep down she's still that terrified seven year old girl maybe not in personality but definitely in emotional stability.

I was thinking of something along the lines of this:
There is a very sadistic hunter going around hunting nothing but Faunus, killing them brutally and taking their animal parts as trophies. A stealthy team has to be deployed to either capture him or take him out.

While I'll admit having a couple of faunus to act as bait would be a good idea there is no reason why human hunters couldn't accomplish that mission.

True. It's more like a "revenge" sort of mission, I thought. Of course, humans should be able to accomplish all that, too.
