"But I digest" is entirely accurate but just hilarious to throw in in regular conversation. I might have to steal that.

I know it's still a word but the phrase is "But I digress," it refers to a change in topic. Using digest in the context of it meaning to understand something by period of reflection doesn't make sense if it's used to refer to something nearly instantaneously. Just plug in the definition to see if it fits.

Whereas if you plug in digress like the phrase normally does, it fits.
