Yeah, Carver's more the 'save the day with an army of magical soldiers' or 'slay the dragon single-handedly' type - training the peasants would be far too practical for him. I imagine him as something similar to Spirits from Dragon Age, if you're familiar; he's an ancient entity that literally embodies these high-minded ideals and cannot conceive of acting outside them who's been kicking around the planet for centuries being a hero and starting legends - 'the brave, faceless knight who showed up, saved the day, and was gone without a trace'.
The reason he may come off as obsessed with old-timey chivalry is because he's pretty much old-timey chivalry made flesh. Of course, I wouldn't expect your characters to know this; it would make more sense for them to expect him to act like a normal person.
