Is there any way to make EE weapons?
There is. Just shape it into the form you want. But remember that it won't be able to interact with most physical weapons since there's no organic material in them.

You should be able to destroy what's left of them in one blast.

Smart. That's a good way to gain more control. Try practicing offensive techniques. Fire a blast of EE outward from your finger. Then try continuous beams. Then large blasts. Practice for finite control by overdoing it.
